That’s what easy make-your-own dinner night was called in our house. This isn’t quite make-your-own but it falls into the same general easy dinner category, along with toasties, toad-in-the-hole and tuna pasta. I should name it something starting with the letter ‘t’. Like Totallllllly dumplings and greens. Haha no.
We buy bags of frozen dumplings from our local Asian supermarket for ~$5. At least once a week this meal is made. Best eaten curled up on the couch.
Dumplings and greens (serves 2)
Ingredients
- As many dumplings as you like. I eat 4, Ash eats 12
- 1 bunch English spinach or 3 baby pak choy, washed and chopped
- Asian dressing
Method
- Line a big bamboo steamer with baking paper and poke a few holes through it. Mine’s big enough to fit over my biggest skillet, which fits all the dumplings in one go. You can buy the steamer really cheaply at any Asian grocer or dollar shop.
- Steam dumplings.
- While the dumplings are being steamed, prepare dressing.
- Just before dumplings are ready, steam your greens in a 2nd steamer, until just wilted (if you don’t have one, you could saute them, steam in a bowl covered in clingwrap in the microwave, or eat them raw as I usually like to do).
- Pile greens in pasta-bowls, top with dumplings and dressing.
